  • 1 parchment paper
  • 1 medium saucepan
  • 1 wooden spoon or spatula
  • 1 candy thermometer (optional)
  • 1 refrigerator

Ingredients
  

  • 2 cups white chocolate chips about 12 oz
  • 1 can sweetened condensed milk (14 oz)
  • 1 cup shelled pistachios roughly chopped
  • 1 teaspoon vanilla extract
  • a pinch salt
  • green food coloring optional, for color

Instructions
 

  • Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later.
  • In a medium saucepan, combine the white chocolate chips and sweetened condensed milk over medium-low heat. Stir continuously until the mixture is smooth and fully melted.
  • Remove from heat and stir in the vanilla extract, a pinch of salt, and the chopped pistachios. If desired, add a few drops of green food coloring.
  • Pour the fudge mixture into the prepared baking dish and use a spatula to spread it evenly.
  • Place the baking dish in the refrigerator for at least 2 hours, or until the fudge is completely set.
  • Once set, lift the fudge out using the parchment overhang and cut into 16 squares.
  • Serve and enjoy your homemade pistachio fudge!

Notes

Store any leftover fudge in an airtight container in the refrigerator for up to one week.
You can substitute almonds or walnuts for pistachios if you prefer a different flavor.
Drizzle some melted dark chocolate on top before chilling for a decorative touch.
