Preheat your oven to 325°F (160°C).
In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.
Press the crumb mixture into the bottom of the springform pan to form an even layer. Set aside.
In another bowl, beat the softened cream cheese and granulated sugar together with an electric mixer until smooth and creamy.
Add the eggs one at a time, mixing well after each addition. Incorporate the sour cream and vanilla extract, mixing until smooth.
Fold in the chopped pistachios gently with a rubber spatula.
Pour the cheesecake filling over the prepared crust in the springform pan.
Bake in the preheated oven for 60 minutes, or until the center is set but slightly jiggly.
Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.
Remove the cheesecake from the oven and allow it to cool to room temperature. Once cool, refrigerate for at least 4 hours, preferably overnight, to set fully.
Before serving, whip the heavy cream and fold it into the whipped cream for a lighter topping.
Spread the whipped cream on top of the cheesecake and sprinkle with additional chopped pistachios for garnish.
