  • 1 muddler or the back of a wooden spoon
  • 1 jigger or measuring cup
  • 4 glasses for serving
  • 1 stirring spoon
  • 1 ice bucket optional

Ingredients
  

  • 1 cup fresh mint leaves About 2 packed cups.
  • ½ cup fresh lime juice About 4 limes.
  • ½ cup coconut cream
  • ¼ cup simple syrup Adjust to taste.
  • 2 cups club soda
  • 1 cup fresh or frozen raspberries For a pink hue.
  • Ice cubes
  • Lime wedges
  • Mint sprigs

Instructions
 

  • In a cocktail shaker, add the fresh mint leaves and lime juice. Use a muddler to gently crush the mint leaves to release their oils.
  • Add the coconut cream and simple syrup to the shaker with the muddled mint and lime juice. Shake well to combine all the ingredients.
  • Fill four glasses with ice cubes. Strain the mixture from the shaker evenly into each glass.
  • Top each glass with club soda, gently stirring to combine without losing too much fizz.
  • Divide the raspberries among the glasses, gently pressing them down to release their juices and add a lovely pink color to the drink.
  • Garnish each drink with a lime wedge and a sprig of fresh mint.
  • Serve immediately and enjoy the refreshing flavor of the Pink Coconut Mojito!

Notes

For a sweeter drink, you can adjust the amount of simple syrup based on your preference.
To create a layered effect, you can add the raspberries to the bottom of the glass before pouring the mojito mixture over them.
