Ingredients
  

  • 1 medium ripe pineapple Approximately 3 cups sliced.
  • 2 cups granulated sugar
  • ½ cup water
  • 1 tablespoon crushed red pepper flakes Adjust according to taste preference.
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions
 

  • Begin by cutting the pineapple into thin slices, removing any tough core. You should have about 3 cups of pineapple slices.
  • In a medium saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar has dissolved completely.
  • Add the crushed red pepper flakes, ground cinnamon, and salt to the saucepan. Stir well to combine.
  • Once the syrup is ready, add the pineapple slices to the saucepan. Let the pineapple simmer in the syrup over medium heat for about 25-30 minutes. Gently stir occasionally to ensure even coating.
  • After 30 minutes, use a slotted spoon to remove the pineapple slices from the syrup, letting the excess syrup drip off.
  • Place the candied pineapple on a plate lined with paper towels to cool and allow the surface to dry for about an hour.
  • Once cooled, you can store the Pineapple Cowboy Candy in an airtight container in the refrigerator.

Notes

Adjust the level of heat by modifying the amount of crushed red pepper flakes according to your taste preference.
These candied pineapples make an excellent garnish for desserts like ice cream or cake, or can be enjoyed on their own as a sweet treat.
