Ingredients
  

  • 1 cup crushed pineapple drained
  • 1 cup cream cheese softened
  • 1 ½ cups powdered sugar

  • 2 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 1 cup chopped nuts such as walnuts or pecans

Instructions
 

  • In a mixing bowl, combine the drained crushed pineapple and softened cream cheese. Mix well until smooth and creamy.
  • Gradually add the powdered sugar and vanilla extract to the mixture, stirring continuously until well combined.
  • Fold in the graham cracker crumbs, shredded coconut, and chopped nuts. Mix until all ingredients are evenly distributed.
  • Using your hands, scoop out small portions of the mixture and roll them into balls (about 1 inch in diameter).
  • Place the balls on a baking sheet lined with parchment paper.
  • Refrigerate the balls for at least 30 minutes to firm up.
