- 1 lb boneless, skinless chicken breasts Cut into bite-sized pieces.
- 2 cups fresh pineapple chunks
- 1 cup bell peppers Sliced (mixed colors).
- 1 cup broccoli florets
- 1 medium onion Sliced.
- 3 cloves garlic Minced.
- 2 tablespoons vegetable oil
- ¼ cup soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1 teaspoon grated ginger Optional.
- Salt and pepper To taste.
- Cooked rice or noodles For serving.
In a bowl, mix together the soy sauce, honey, cornstarch, and grated ginger (if using). Set aside.
In a large frying pan or wok, heat the vegetable oil over medium-high heat.
Add the cut chicken pieces to the pan. Season with salt and pepper, and stir-fry for about 5-6 minutes, or until the chicken is cooked through and slightly browned.

Stir in the pineapple chunks and pour the prepared sauce over the chicken and vegetables. Toss everything together to combine, cooking for an additional 1-2 minutes until the sauce thickens and coats the stir-fry evenly.
Remove from heat and serve the pineapple chicken stir-fry over cooked rice or noodles.
