Ingredients
  

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked jasmine rice
  • 1 cup chicken broth Use instead of water for cooking rice.
  • 1 cup canned pineapple chunks, drained Reserve juice.
  • ½ cup bell pepper, diced
  • ½ cup onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water Optional, for thickening.
  • to taste salt and pepper
  • for garnish green onions, chopped

Instructions
 

  • Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to the package instructions using chicken broth instead of water for added flavor. Set aside when done.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened.
  • Add the minced garlic and chicken pieces to the skillet. Season with salt and pepper. Cook the chicken for about 5-7 minutes until browned and cooked through.
  • Stir in the pineapple chunks and soy sauce, mixing everything thoroughly. If you want a thicker sauce, add the cornstarch mixture now. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  • Add the cooked rice to the skillet. Gently fold it in with the chicken and pineapple mixture until well incorporated.
  • Taste and adjust seasoning if necessary. Remove from heat and garnish with chopped green onions.

Notes

For a spicier version, consider adding diced jalapeños or a splash of hot sauce.
