Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 cup canned pineapple chunks Drained, with juice reserved.
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • fresh cilantro or parsley For garnish (optional).

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the BBQ sauce, pineapple juice (from the reserved pineapple juice), olive oil, soy sauce, garlic powder, onion powder, black pepper, and salt. Whisk until well blended.
  • Place the chicken breasts in a baking dish. Pour half of the BBQ sauce mixture over the chicken, ensuring they are well coated.
  • Scatter the pineapple chunks on top of the chicken.
  • Drizzle the remaining BBQ sauce mixture over the pineapple chunks and chicken.
  • Cover the baking dish with aluminum foil to keep the chicken moist while baking.
  • Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let it rest for 5 minutes before serving.
  • Garnish with fresh cilantro or parsley if desired, and serve with your choice of sides.

Notes

This dish pairs well with rice, quinoa, or a fresh green salad.
For added flavor, marinate the chicken in the sauce for a few hours or overnight before baking.
You can also grill the chicken on high heat for a smoky flavor if preferred.
If you like a little heat, consider adding a dash of cayenne pepper or hot sauce to the BBQ mixture.
