Ingredients
  

  • 1 cup shredded sharp cheddar cheese (4 oz)
  • ½ cup cream cheese, softened (4 oz)
  • ½ cup diced pimentos (drained) (2 oz)
  • ¼ cup mayonnaise (2 oz)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional)

  • 1 cup cornmeal (for the base) (4 oz)

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the shredded cheddar cheese, softened cream cheese, diced pimentos, mayonnaise, garlic powder, onion powder, cayenne pepper, salt, and pepper. Mix until well blended.
  • Using a teaspoon, drop heaping spoonfuls of the pimento cheese mixture onto the prepared baking sheet, leaving space in between each dollop to allow for spreading.
  • Gently flatten each dollop to form small rounds.
  • Sprinkle cornmeal over the top of each cheese round to create a crispy base.
  • Bake in the preheated oven for about 10 minutes, or until the edges are golden and the cheese is bubbly.
  • Remove from the oven and let cool slightly before serving.
  • Serve with crackers or fresh vegetables for a more substantial snack.

Notes

These crisps can be made ahead of time and stored in an airtight container for a day or two.
For added flavor, consider stirring in chopped green onions or jalapeños into the cheese mixture.
