Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper if desired.
In a small saucepan, melt the butter over low heat. Add minced garlic, parsley, salt, and pepper. Stir well and remove from heat. Set aside to allow the flavors to meld.
Open the cans of refrigerated biscuits. Cut each biscuit in half to create two smaller rounds.
Take a half-biscuit and flatten it slightly using your hands. Place a tablespoon of shredded mozzarella cheese in the center.
Gather the edges of the biscuit and pinch it closed around the cheese filling, forming a ball. Repeat with the remaining biscuits and cheese.
Place the cheese-filled biscuit balls on the prepared baking sheet, spacing them about 2 inches apart.
Brush the garlic butter mixture generously over each biscuit bomb, ensuring they are well-coated.
Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the cheese is bubbling.
Remove from the oven and let cool slightly before serving. Serve warm.
