Melt butter in a large skillet over medium heat until bubbly.
Saute diced onion and bell pepper for about 5 minutes until soft.
Add ground beef, breaking apart with a spatula, cook until brown, about 7 to 10 minutes.
Stir in beef broth, ketchup, Worcestershire sauce, salt, and pepper.
Simmer for about 10 minutes then add cornstarch slurry.
Cook for another 2 to 3 minutes until thickened.
Turn off heat and add cheese to mix until melted.
Toast buns and serve sloppy joe mix atop.
