Preheat your oven to 350°F (175°C).
In a skillet over medium heat, add a bit of oil and sauté the chopped onion and bell pepper until softened, about 5 minutes. Add minced garlic and cook for another minute. Remove from heat and let cool slightly.
In a large mixing bowl, combine the ground beef, sautéed vegetables, salt, black pepper, Italian seasoning, eggs, breadcrumbs, ½ cup of provolone cheese, steak sauce, and Worcestershire sauce. Mix until just combined; do not overmix.
Transfer the mixture to a loaf pan, shaping it into a loaf. If desired, spread a thin layer of steak sauce on top and sprinkle with remaining provolone cheese.
Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. Serve warm with additional steak sauce if desired.
