Peruvian-Style Grilled Chicken with Creamy Green Sauce (Aji Verde)
Smoky and juicy Peruvian-style chicken marinated in bold spices and served with a tangy, creamy green sauce made with fresh cilantro, garlic, and lime. Perfect with fries or rice for a complete hearty meal.
Rinse and pat dry chicken. Trim excess fat or skin.
Mix together garlic, lime juice, olive oil, smoked paprika, cumin, oregano, salt, and pepper. Rub onto chicken and marinate for 1-24 hours.
Blend cilantro, jalapeño, garlic, mayonnaise or Greek yogurt, lime juice, and olive oil until smooth. Add salt and pepper to taste. Chill the sauce.
Wash and peel potatoes. Cut into fries and toss with avocado oil, salt, and pepper. Roast at 425°F for 25-30 minutes or fry until golden.
Preheat grill to medium-high. Grill chicken 6–8 minutes per side until internal temp reaches 165°F. Let rest 5 minutes.
Serve chicken and fries with creamy green sauce.
