In a mixing bowl, combine the cooled toasted pecans, graham cracker crumbs, brown sugar, corn syrup, melted butter, vanilla extract, and salt. Mix until well combined and the mixture holds together when pressed.
Using your hands, scoop out small amounts of the mixture and roll into balls, roughly the size of a tablespoon. Place formed truffles on a baking sheet lined with parchment paper.
Once all truffles are rolled, place them in the refrigerator for about 15 minutes to firm up.
Melt the semi-sweet chocolate chips in a saucepan over low heat, stirring frequently until smooth. If desired, add coconut oil to achieve a smoother consistency.
Remove the truffles from the refrigerator. Dip each truffle into the melted chocolate using a fork, shaking off any excess, and return them to the parchment-lined baking sheet.
Allow the chocolate to set by placing the truffles back in the refrigerator for about 15-20 minutes.
Once the chocolate has hardened, your Pecan Pie Truffles are ready to serve!
