Peanut Butter Yogurt Bites

Main ingredients

  • 1 cup thick yogurt Greek or coconut works best
  • ΒΌ cup powdered peanut butter or peanut butter protein powder
  • 3 tablespoons peanut butter
  • 3 to 4 tablespoons maple syrup or honey to sweeten
  • Dates ripped in half and rolled into tiny balls or chopped
  • 1 teaspoon vanilla extract
  • a generous pinch sea salt
  • 1 cup chopped chocolate or chocolate chips
  • 1 teaspoon coconut oil to keep chocolate smooth

  • First up, grab your mixing bowl and dump in the thick yogurt. Follow with the powdered peanut butter and the creamy peanut butter. Stir everything up real good so it’s all smooth.
  • Add maple syrup or honey next and pour in the vanilla extract. Don’t forget to toss in that pinch of sea salt. Stir again till you can’t see any lumps.
  • Now fold in the chopped chocolate or chocolate chips plus your dates. Spread out that mixture into your molds or onto a lined tray, smoothing the top nice and even.
  • Pop those into the freezer for at least 2 hours so they can set just right. No pressure needed here other than the cooker later if you use it for your other recipes!
  • Once set, carefully pop the bites out of the molds. Store them in an airtight container in the freezer so they keep great whenever you want a quick snack.

Notes

Serve immediately after taking them out of the freezer for a fresh, firm texture.
