Ingredients
  

Yogurt Base

  • 1 cup Plain Greek Yogurt full of protein and tang
  • 0.5 cup No-Sugar-Added Peanut Butter
  • 1 teaspoon Vanilla Extract
  • 4-5 tablespoons Monk Fruit/Allulose Blend or sweetener of choice to taste

Chocolate Coating

  • 1 cup Sugar-Free Chocolate Chips
  • 1 tablespoon Coconut Oil

Preparation Steps

  • Mix the Yogurt Base: In a medium bowl, combine the Greek yogurt, peanut butter, vanilla extract, and sweetener. Stir until the mixture is smooth and thick.
  • Using a mini cookie scoop or spoon, drop small mounds of the yogurt mixture onto a parchment-lined baking sheet. Freeze for at least 1 hour, or until firm.
  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in 15- to 30-second intervals, stirring after each, until fully melted and smooth.
  • Dip each frozen yogurt bite into the melted chocolate and place back on the parchment-lined tray. Optional: sprinkle with flaky sea salt while the chocolate is still soft.
  • Return the tray to the freezer or place bites in the refrigerator until the chocolate sets. Store in an airtight container in the fridge or freezer, depending on your preferred texture.

Notes

Use full-fat Greek yogurt for the creamiest texture. For dairy-free, substitute with a thick plant-based yogurt and vegan chocolate chips. These bites can be stored in the freezer for up to 2 months. For a true bite-size treat, use a teaspoon instead of a cookie scoop.
