Ingredients
  

  • 1 medium ripe peach, pitted and chopped Approximately 1 cup.
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • ¼ cup balsamic vinegar
  • ½ cup extra-virgin olive oil
  • to taste salt
  • to taste pepper

Instructions
 

  • Begin by washing and pitting the peach. Chop it into small pieces for easier blending.
  • In a blender or food processor, combine the chopped peach, honey, Dijon mustard, and balsamic vinegar. Blend until smooth and well combined.
  • With the blender running on a low speed, slowly add the extra-virgin olive oil until the vinaigrette is emulsified and creamy.
  • Taste and season with salt and pepper according to your preference. Blend briefly to mix in the seasoning.
  • Transfer the vinaigrette to a bowl or jar for storage.
  • If you have any leftovers, it can be kept in the refrigerator for up to a week.

Notes

For a sweeter vinaigrette, use a ripe peach or increase the amount of honey.
This vinaigrette pairs wonderfully with mixed greens, grilled chicken salads, or as a marinade for vegetables.
Feel free to adjust the vinegar and olive oil ratio based on your taste preference.
