  • 1 tablespoon oil for cooking garlic and veggies
  • 4 cloves garlic minced
  • 4 or 5 parsnips peeled and diced
  • ½ head fennel sliced thin
  • 1 leek white part only, chopped
  • 4 cups vegetable stock
  • ¼ cup heavy cream
  • 1 tablespoon oil for caramelizing apples
  • 1 red apple peeled and chopped small
  • 1 pinch nutmeg for apples
  • salt and pepper to taste

  • Heat 1 tablespoon of oil in your pressure cooker pot on medium heat. Add the minced garlic and cook just until fragrant, about 1–2 minutes.
  • Add chopped leek and sliced fennel. Cook for 5 minutes until softened and slightly sweetened, without browning too much.
  • Stir in the diced parsnips and let them cook for a couple of minutes to lightly caramelize.
  • Pour in the vegetable stock and lock the pressure cooker lid. Bring to pressure over medium-high heat.
  • Once pressure is reached, cook for 10 minutes. Then carefully do a slow release to depressurize the cooker.
  • While the soup cooks, heat another tablespoon of oil in a skillet over medium heat. Add the chopped apple and cook until edges caramelize. Add a pinch of nutmeg and toss to combine. Set aside.
  • After releasing pressure, blend the soup with an immersion blender or transfer to a traditional blender in batches if cooled. Stir in heavy cream and season with salt and pepper.
  • Ladle soup into bowls and top with caramelized apples and fennel fronds if available. Serve warm and enjoy!
