Ingredients
  

  • 4 fillets salmon 6 oz each
  • 2 cups cherry tomatoes halved
  • 1 cup fresh corn kernels or 1 can of corn, drained
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cherry tomatoes, corn, olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat well.
  • Place the salmon fillets on the prepared baking sheet, skin side down. Drizzle each fillet with lemon juice and sprinkle with salt and pepper.
  • Spread the corn and tomato mixture around the salmon on the baking sheet.
  • Bake in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  • Remove from the oven and let it rest for a couple of minutes. Garnish with fresh parsley before serving.

Notes

You can substitute fresh corn with a frozen corn option if fresh corn is not available.
This dish pairs well with a side of quinoa or a green salad for an extra dose of nutrients.
Feel free to adjust the seasoning according to your taste preferences; a sprinkle of red pepper flakes can add a nice kick.
