Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef Can substitute with ground turkey or chicken for a lighter option.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional) Can stir in until melted and well combined if desired.
  • Fresh parsley for garnish (optional)

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5 minutes.
  • Add the diced onion, minced garlic, and bell pepper to the pot. Sauté for another 3-4 minutes until the vegetables are softened.
  • Stir in the diced tomatoes, beef broth, elbow macaroni, paprika, oregano, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes, stirring occasionally, until the macaroni is cooked and the liquid has reduced slightly.
  • If desired, stir in the shredded cheddar cheese until melted and well combined.
  • Remove from heat and let sit for a few minutes. Serve hot, garnished with fresh parsley if using.

Notes

You can substitute ground beef with ground turkey or chicken for a lighter option.
Feel free to add other vegetables, such as corn or peas, for added nutrition and flavor.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave before serving.
