Cut the chicken breast into bite sized pieces.
Set your pressure cooker to sauté mode. Melt 2 tablespoons butter until sizzling.
Add chicken and cook until browned and cooked through, about 5-7 minutes.
Add minced garlic and stir for about a minute until fragrant.
Add penne pasta, chicken broth, and milk. Stir to combine.
Lock the lid and cook on high pressure for 5 minutes once float valve is up.
Let naturally release for 10 minutes before opening the lid.
Stir in cream cheese until melted and creamy.
Add pesto and Parmesan. Stir to combine. Season with black pepper and crushed red pepper.
Add fresh spinach and sun dried tomatoes (if using) and stir until spinach wilts.

Notes
Store leftovers in fridge up to 3 days or freeze in portions. Reheat gently with splash of milk or broth. Great as a baked casserole too!
