  • 1 lb Boneless skinless chicken breast cut into bite-sized pieces
  • 2 tablespoon Butter
  • 2 cloves Garlic minced
  • 0.5 lb Penne pasta
  • 1.5 cups Chicken broth
  • 1 cup Milk
  • 3 oz Cream cheese cut into chunks
  • cup Basil pesto
  • ¼ cup Grated Parmesan cheese
  • to taste Freshly cracked pepper
  • 1 pinch Crushed red pepper optional
  • 3 cups Fresh spinach optional add-in
  • ¼ cup Sliced sun dried tomatoes optional add-in

  • Cut the chicken breast into bite sized pieces.
  • Set your pressure cooker to sauté mode. Melt 2 tablespoons butter until sizzling.
  • Add chicken and cook until browned and cooked through, about 5-7 minutes.
  • Add minced garlic and stir for about a minute until fragrant.
  • Add penne pasta, chicken broth, and milk. Stir to combine.
  • Lock the lid and cook on high pressure for 5 minutes once float valve is up.
  • Let naturally release for 10 minutes before opening the lid.
  • Stir in cream cheese until melted and creamy.
  • Add pesto and Parmesan. Stir to combine. Season with black pepper and crushed red pepper.
  • Add fresh spinach and sun dried tomatoes (if using) and stir until spinach wilts.

Notes

Store leftovers in fridge up to 3 days or freeze in portions. Reheat gently with splash of milk or broth. Great as a baked casserole too!
