One Pot Creamy Cajun Sausage Pasta: A Cozy Pressure Cooker Delight

  • 13 oz Cajun andouille sausage sliced into coins
  • 1 tablespoon Chopped garlic for that punch
  • 14.5 oz Chicken broth about 2 cups to keep it juicy
  • ½ cup Heavy cream for the creamy dream
  • 10 oz Rotel diced tomatoes and chilies adds a little kick
  • 8 ounces Dry bowtie pasta roughly 2 cups
  • 2 cups Shredded cheddar cheese to melt on top
  • 1 teaspoon Cajun seasoning feel free to tweak to your liking

  • In a large skillet or pressure cooker pot set to sauté, brown the cajun andouille sausage coins over medium heat for about 5 minutes until nice and golden. This brings out that wonderful sausage grease you don’t want to dump.
  • Remove the sausage and set it aside on a paper towel lined plate. Don’t lose that grease in the pan.
  • Throw the chopped garlic in the leftover sausage grease and sauté for about a minute until fragrant. If you like, toss in those chopped onions and bell peppers too before the garlic.
  • Add in the chicken broth, heavy cream, and the can of Rotel diced tomatoes and chilies. Sprinkle in the cajun seasoning, then give everything a good stir.
  • Stir in the dry bowtie pasta making sure it’s covered by the liquid. Place the lid on and seal your pressure cooker.
  • Let the pressure build and cook the pasta under pressure for about 7 minutes. Then, do a natural release to keep that broth depth rich and prevent splatter.
  • Open the lid and stir in your browned sausage and shredded cheddar cheese until melty and luscious. Serve right away and watch everyone dig in!
