  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 tablespoon tomato paste
  • 1 teaspoon coarsely ground black pepper
  • 1 teaspoon smoked paprika
  • 2 ½ cups beef broth
  • 1.5 pounds lean ground beef
  • 4 tablespoon ketchup
  • 2 tablespoon yellow mustard
  • 1 ½ cup orzo
  • 2 tablespoon chopped parsley
  • 1 ½ cup shredded cheddar

  • Heat olive oil in a large skillet over medium heat. Add diced onion.
  • Add the onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Add the ground beef, breaking it apart with your spatula as you brown it fully.
  • Mix in tomato paste, black pepper, and smoked paprika. Stir well.
  • Add beef broth and bring it to a gentle simmer.
  • Add orzo pasta, ketchup, and yellow mustard. Stir evenly.
  • Cover and cook for about 10-12 minutes under pressure. After slow release, stir in chopped parsley and shredded cheddar and cover until cheese melts.

Notes

Serve topped with pickles and chopped onion for a true cheeseburger feel. Store leftovers in an airtight container in the fridge for up to 3 days.
