  • 1 tablespoon olive oil for base flavor
  • 500 g beef mince
  • 1 onion diced
  • 1 red capsicum diced
  • 1 zucchini grated
  • 1 carrot grated
  • 2 cloves garlic minced
  • 2 teaspoons Cajun seasoning
  • 1 cup beef stock
  • 400 g diced tomatoes canned
  • 250 g pasta your choice
  • 0.5 cup cheddar cheese grated
  • salt and pepper to taste
  • fresh parsley for garnish

  • Heat the olive oil in your pot over medium heat until hot enough for the beef to sizzle.
  • Throw in the beef mince and brown well, breaking it apart as it cooks.
  • Add the diced onion, capsicum, zucchini, carrot, and garlic. Stir and cook for 5-7 minutes until softened.
  • Sprinkle Cajun seasoning and stir for one minute to release flavors.
  • Pour in the beef stock, diced tomatoes, and pasta. Stir to combine.
  • Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes stirring occasionally.
  • Remove lid, stir in grated cheddar until melted. Season with salt and pepper.
  • Plate and garnish with fresh parsley.

Notes

Cool leftovers before storing. Keeps in fridge up to 4 days or freeze portions for 2 months. Reheat with beef broth if needed.
