Instructions
Instructions
First things first you gotta preheat your oven to 400 degrees Fahrenheit. This is gonna help finish the chicken with that golden baked look later on.
Next, melt the butter in a large skillet over medium heat. Throw in the chopped onion and let it soften up for about 5 minutes. You’ll notice it gets all sweet and tender looking.
Add your diced jalapeños and minced garlic next. Cook that combo for 2 more minutes. This little step pumps up the flavor and releases spicy oils that make your house smell amazing.
Time to season your chicken breasts. Sprinkle cumin, chili powder, garlic powder, salt, and pepper all over. You want them evenly coated so every bite tastes great.
Place the seasoned chicken in that skillet and sear for 3-4 minutes each side till they get golden brown. This step locks in juices and builds flavor with a nice crust.
Transfer the skillet into your preheated oven and bake the chicken for 20 minutes. You gotta check it hits an internal temp of 165 degrees Fahrenheit so it’s safe to eat but still juicy.
Once it’s done, pull the skillet out and top those chicken pieces with cheese. Pop it back in the oven for 5 more minutes till the cheese melts perfectly gooey. Then you’re ready to plate up and enjoy.
Notes
Serve warm cheesy jalapeño chicken topped with melted cheddar cheese.
