Ingredients
  

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed 15 oz can
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning 1 oz packet
  • 1 cup shredded cheddar cheese
  • 1 bell pepper, diced
  • 1 small onion, diced
  • to taste salt
  • to taste pepper
  • for garnish fresh cilantro or parsley optional

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking for about 3-4 minutes until softened.
  • Add the diced chicken to the pan, seasoning with salt and pepper. Cook until the chicken is browned on all sides, about 5-6 minutes.
  • Stir in the taco seasoning, ensuring the chicken is well-coated. Add the rice, chicken broth, black beans, and corn, mixing everything together thoroughly.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
  • Once the rice is cooked, remove the skillet from heat and sprinkle the shredded cheddar cheese on top. Cover the skillet for an additional 5 minutes to allow the cheese to melt.
  • Fluff the rice with a fork, garnish with fresh cilantro or parsley if desired, and serve warm.
