Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup honey BBQ sauce
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste salt
  • to taste pepper
  • chopped green onions for garnish optional

Instructions
 

  • Begin by cutting the chicken breasts into bite-sized pieces. Season with garlic powder, onion powder, salt, and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook until browned, about 5-7 minutes.
  • Once the chicken is browned, add the uncooked rice to the skillet and stir well to combine.
  • Pour in the chicken broth and honey BBQ sauce, bringing the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the skillet with a lid, and simmer for about 15 minutes.
  • After 15 minutes, stir in the frozen mixed vegetables. Cover anew and continue to cook for an additional 5-10 minutes, or until the rice is tender and has absorbed most of the liquid.
  • Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped green onions if desired.
  • Serve warm and enjoy your one-pan meal!

Notes

You can easily customize this dish by adding your favorite vegetables.
For extra flavor, consider marinating the chicken in BBQ sauce for a few hours before cooking.
Make sure to check the rice occasionally to prevent sticking and ensure even cooking.
