Heat the olive oil in a large skillet over medium-high heat.
Season the chicken thighs on both sides with salt and pepper.
Once the oil is hot, add the chicken thighs to the skillet and sear for about 5 minutes on each side until they are golden brown.
Remove the chicken from the skillet and set it aside on a plate.
In the same skillet, add the cherry tomatoes, sliced bell pepper, and green beans. Sauté for 3-4 minutes until the vegetables begin to soften.
In a small bowl, whisk together the balsamic vinegar, honey, and minced garlic.
Return the chicken to the skillet and pour the balsamic mixture over the top.
Reduce the heat to medium-low, cover the skillet, and let everything simmer for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
Once done, remove from heat and let the dish rest for a few minutes.
Serve the chicken and vegetables on plates, drizzling extra sauce from the pan over the top. Garnish with fresh basil if desired.
