Soak the beans at least 8 hours overnight so they soften up right.
Cook the bacon in the pot until crispy. Remove and keep the drippings.
Add chopped onion and cook till translucent, about 5 minutes. Stir in the garlic.
Add all ingredients into the pot and stir.
Pour enough water over the beans to cover by an inch. Cook for 30 minutes at high pressure.
Let the pressure drop naturally. Open the valve for a quick release if needed. If broth is thin, simmer a bit.
Notes
Let the beans cool before storing to prevent sogginess. They taste better the next day!
