  • 2 tablespoons natural peanut butter the kind you love, chunky or smooth
  • ¼ cup plain Greek yogurt plus some more if you want to tweak consistency
  • 1 tablespoon maple syrup for natural sweetness
  • 1 teaspoon vanilla extract optional but adds a nice touch
  • 2 tablespoons vanilla protein powder for added protein
  • 3-4 tablespoons oat flour or almond flour whichever you prefer
  • Pinch salt to balance everything out
  • 3 tablespoons mix-ins of your choice chocolate chips, M&Ms, oats, etc.

  • First, grab your mixing bowl and combine the peanut butter, Greek yogurt, maple syrup, and vanilla extract. Stir until everything looks smooth and creamy.
  • Next, add the vanilla protein powder, oat or almond flour, and the pinch of salt into your bowl. Stir it all up until it’s well mixed and kinda doughy but still soft.
  • Now, fold in your mix-ins. Chocolate chips, M&Ms, oats—you name it. Make sure they’re evenly spread out.
  • If the dough feels dry or crumbly, no worries. Add a spoonful of Greek yogurt at a time until it’s just right—not too sticky but easy to scoop.
  • Scoop out the dough and form into balls or little drops on a baking sheet lined with parchment paper. It’s messy, kinda fun!
  • Pop that sheet into the fridge for at least 30 minutes. The cooling helps the dough firm up so it holds shape when you dig in.
  • Once chilled and firm, you’re ready to enjoy. Grab a couple and savor that tender pull of smooth cookie dough with protein packed in every bite.

Notes

Please note depending on how runny your peanut butter is, you may need to adjust the oat/almond flour to meet desired consistency preferences! I typically recommend 3-5 tbsp! The sweetness of your protein powder will also affect the taste. If you use a sweeter protein powder, you may be able to decrease the amount of maple syrup.
