Ingredients
  

  • 1 cup rolled oats
  • ½ cup peanut butter creamy or crunchy
  • ¼ cup honey or maple syrup
  • ¼ cup cocoa powder
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions
 

  • In a mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), cocoa powder, vanilla extract, and salt.
  • Mix all the ingredients together until they are fully combined. The mixture should be thick and sticky.
  • Using a spoon or your hands, scoop out a small amount of the mixture (about 1 tablespoon) and shape into a cookie.
  • Place the formed cookie onto a piece of wax paper or parchment paper. Repeat this process until all the mixture is used.
  • Once all cookies are shaped, let them sit at room temperature for about 10 minutes to firm up.
  • Serve immediately or store in an airtight container in the refrigerator for up to a week.

Notes

You can customize these cookies by adding ingredients like chocolate chips, chopped nuts, or dried fruit.
If the mixture is too sticky to handle, refrigerate it for a few minutes to make it easier to shape.
For an extra touch, sprinkle some sea salt on top of the cookies before they firm up.
