Start by melting your butter in a medium saucepan over medium heat, watch it bubble without burning.
Stir in brown sugar and vanilla extract till you get a smooth, sweet sauce.
Take your pan off the heat and fold in the peanut butter, mix till it's melting and smooth.
Pour in quick cooking oats, mix till oats are fully coated and sticky.
Gently fold in your chocolate chips, try not to melt them too much here.
Press this mix into a greased 9x13 inch baking dish so it sets up nice and firm.
Transfer that dish into your pressure cooker, place on a trivet so it doesn't touch water. Seal the lid, cook under high pressure for 10 minutes, then do a quick release carefully. Cool with a natural release for 5 minutes before chilling for 30 mins to firm up.
