  • 2 lbs Beef chuck cut into chunks
  • 3 Carrots peeled and sliced
  • 2 Celery stalks chopped
  • 1 Onion diced
  • 3 cloves Garlic minced
  • 4 Potatoes peeled and cubed
  • 1 cup Beef broth
  • 1 cup Red wine optional
  • 2 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • 2 Bay leaves
  • to taste Salt
  • to taste Black pepper freshly ground
  • 1 cup Peas frozen or fresh
  • ¼ cup Fresh parsley chopped for garnish

  • Heat olive oil in a large skillet over medium heat.
  • Brown beef chunks on all sides, then transfer to slow cooker.
  • Sauté onions, garlic, carrots, and celery in the skillet until softened.
  • Add tomato paste and cook for 1-2 minutes, stirring constantly.
  • Transfer vegetable mixture to slow cooker with beef.
  • Add potatoes, beef broth, red wine, thyme, rosemary, bay leaves, salt, and pepper to slow cooker.
  • Cook on low for 6 hours or until beef is fall-apart tender.
  • Stir in peas and cook for an additional 15 minutes before serving. Garnish with fresh parsley.

Notes

Serve hot with crusty bread or over mashed potatoes for a comforting meal. Leftovers taste great the next day!
