Million Dollar Soup Pressure Cooker Recipe

This creamy and hearty million dollar soup is packed with tender chicken, melty cheese, gnocchi, kale, and crunchy parmesan breadcrumbs — all made fast in your pressure cooker!

  • 1 Mixing bowl for breadcrumbs
  • 1 Large pot if not using pressure cooker

  • 2 tablespoons olive oil
  • 2 tablespoons butter 1 tablespoon for onions and 1 for cooking
  • 2 medium sweet onions thinly sliced
  • salt a pinch
  • 1 cup panko bread crumbs
  • ½ cup grated Parmesan
  • 3 tablespoons butter melted for breadcrumbs
  • 1 cup chopped celery
  • ½ cup sliced fennel bulb
  • 3 garlic cloves minced
  • ¼ cup white wine
  • 6 cups chicken stock
  • 3 cups fresh kale chopped
  • 1 cup cooked bacon crumbled
  • shredded cooked chicken breast
  • potato gnocchi
  • cheddar cheese shredded
  • heavy cream
  • soy sauce
  • thyme
  • pepper
  • cayenne pepper
  • cornstarch
  • water mixed with cornstarch

Instructions

  • Caramelize onions in olive oil and butter with a pinch of salt over medium heat for about 15–20 minutes, stirring occasionally.
  • Mix panko, Parmesan, and melted butter in a bowl to make breadcrumb topping. Set aside.
  • Add additional olive oil, celery, fennel, and garlic to onions. Cook a couple minutes until fragrant.
  • Pour in white wine, chicken stock, soy sauce, spices, kale, bacon, and chicken. Pressure cook for 7 minutes, then let pressure release naturally before venting.
  • Open lid, stir in cream, cheddar, and gnocchi. Mix cornstarch with water and add to thicken. Serve hot topped with parmesan breadcrumbs.

Notes

Use rotisserie chicken to save time. Store parmesan topping separately to keep crunchy.
