This creamy and hearty million dollar soup is packed with tender chicken, melty cheese, gnocchi, kale, and crunchy parmesan breadcrumbs — all made fast in your pressure cooker!

1cupchopped celery
½cupsliced fennel bulb

potato gnocchi

Caramelize onions in olive oil and butter with a pinch of salt over medium heat for about 15–20 minutes, stirring occasionally.
Mix panko, Parmesan, and melted butter in a bowl to make breadcrumb topping. Set aside.
Add additional olive oil, celery, fennel, and garlic to onions. Cook a couple minutes until fragrant.
Pour in white wine, chicken stock, soy sauce, spices, kale, bacon, and chicken. Pressure cook for 7 minutes, then let pressure release naturally before venting.
Open lid, stir in cream, cheddar, and gnocchi. Mix cornstarch with water and add to thicken. Serve hot topped with parmesan breadcrumbs.
Notes
Use rotisserie chicken to save time. Store parmesan topping separately to keep crunchy.
