  • 6 Bell peppers any color, edible bowls
  • 1 tablespoon Olive oil to soften veggies
  • 0.5 medium Onion chopped fine
  • 2 cloves Garlic minced
  • 1 lb Lean ground turkey
  • 1.5 teaspoon Chili powder
  • 1 teaspoon Cumin dried
  • 1 teaspoon Oregano dried
  • 0.5 teaspoon Salt
  • 1 can (15 oz) Diced tomatoes
  • 1.5 cups Salsa split for layering
  • 1.5 cups Cooked brown rice or ¾ cup uncooked
  • 1 cup Corn
  • 1 can (15 oz) Black beans drained and rinsed
  • 2 tablespoon Chopped cilantro
  • 1 cup Shredded Monterey Jack cheese

  • Preheat your oven to 375° to finish the peppers with a bubbly cheesy top.
  • Cut the tops off your bell peppers and scoop out seeds and membranes so they’re ready to stuff.
  • Heat olive oil in a large skillet on medium heat. Toss in chopped onion and garlic to soften them up, about 3-4 minutes.

  • Add ground turkey and spices. Brown the meat well, then stir in diced tomatoes and cook another 5 minutes letting flavors marry.

  • Mix in cooked rice, corn, black beans, and half your salsa. Stir, taste, and adjust spices if needed.

  • Stuff each bell pepper full with the turkey filling, pack it in nice and tight.
  • Put peppers upright in your baking dish, spoon extra salsa on top, and sprinkle cheese over all.

  • Bake 25-30 minutes till peppers are tender and cheese looks melted. Then enjoy your meal!
  • Use quick release right after cooking if you’re in a hurry, or natural release for best flavor melding.
  • To avoid splatter on quick release, tilt the valve away from you so steam doesn’t hit your face.

Notes

Cool leftovers fully before storing to keep flavors fresh. Use airtight containers in fridge up to 4 days or freeze wrapped for 2-3 months. Reheat in oven or microwave for best results.
