Start by washing those red potatoes really good, then cut them into quarters.
Toss your potatoes in a big mixing bowl with olive oil, salt, ancho chili powder, oregano, coriander, garlic powder, black pepper, and a pinch of cayenne.
Put about a cup of water into the bottom of your pressure cooker to create steam. Place the steamer basket or trivet inside and spread your potatoes on top.
Seal your pressure cooker's lid and set your cooker to high pressure.
Cook for about 7 minutes, then perform a quick release to vent steam.
Open your lid carefully watching out for that hot steam.
Sprinkle potatoes with freshly grated Parmesan and a handful of finely chopped cilantro.
Give it a light toss, serve warm.
