  • 1 cup BBQ sauce smoky brand or homemade
  • 2 tablespoon chili powder for signature Mexican BBQ punch
  • 1 teaspoon cumin earthy warmth
  • 1 tablespoon garlic powder subtle but needed flavor boost
  • Salt to taste
  • Pepper to taste
  • 4 soft tortillas to wrap up juicy meat

  • Water or beef broth for steam, a bit

  • First thing, mix your chili powder, cumin, garlic powder, salt, and pepper in a small bowl. Rub it all over your brisket super good.
  • Pour about 1 cup of water or beef broth in the bottom of the pressure cooker. This helps create that perfect steam environment.
  • Place brisket into the pot, fat side up so it bastes as it cooks.
  • Lock the lid in place and set on high pressure cooking for about 45 minutes.
  • Once time’s up, wait for the valve’s steam cue and do a quick release to stop cooking sharp.
  • Remove brisket, brush it well with BBQ sauce, then return it to put on a quick broil in your grill or oven for 5 minutes to caramelize that sauce.
  • Let it rest 10 minutes before slicing thin against the grain. Then scoop it right onto those soft tortillas and get ready to dig in.

Notes

Serve with lime wedges and chopped cilantro for added freshness.
