Ingredients
  

  • 4 pieces chicken thighs (bone-in, skin-on)
  • ¼ cup olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • to taste pieces fresh parsley (for garnish)

Instructions
 

  • In a large bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, thyme, paprika, salt, and black pepper until well combined.
  • Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  • Preheat the oven to 400°F (200°C).
  • Remove the chicken thighs from the marinade and place them skin-side up in a baking dish or on a baking sheet. Discard the remaining marinade.
  • Roast the chicken thighs in the preheated oven for about 30-35 minutes or until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 5 minutes after removing from the oven before serving.
  • Garnish with fresh parsley before serving.

Notes

Serve with a side of roasted vegetables or a Greek salad for a complete meal.
You can substitute chicken breasts if preferred, but adjust the cooking time as they may cook faster.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
