- 1 medium head cauliflower About 4 cups when chopped.
- 1 cup cherry tomatoes Halved.
- 1 cup cucumber Diced.
- ½ cup red onion Finely chopped.
- ½ cup Kalamata olives Pitted and halved.
- ¼ cup fresh parsley Chopped.
- ¼ cup feta cheese Crumbled.
- ¼ cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano

Begin by preparing the cauliflower. Remove the leaves and stem, then chop the cauliflower into small florets. Rinse under cold water.
