Equipment

  • 1 Pressure cooker

Ingredients

Main ingredients

  • 4 Chicken breasts boneless, skinless
  • ½ cup Barbecue sauce
  • ½ cup Pineapple rings
  • 4 slices Swiss cheese
  • 4 Hamburger buns
  • 1 cup Shredded lettuce
  • ¼ cup Mayonnaise
  • 1 tablespoon Olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

Instructions

  • Start by seasoning your chicken breasts with salt and black pepper. Be generous, you’re gonna want those flavors to soak in.
  • Pour a tablespoon of olive oil over the chicken and rub it all around so it’s coated well.
  • Place the chicken in your pressure cooker. Don’t crowd it too much; they need space to cook evenly.
  • Add your pineapple rings on top of the chicken. They’re gonna steam and get sweet real good.
  • Seal up the cooker and set it to cook on high for about 8 minutes. That valve hiss is your signal that pressure’s building.
  • When the timer’s up, use quick release to let the steam out fast. Carefully open the lid and check that tender pull on your chicken.
  • Top each chicken breast with a slice of Swiss cheese so it melts right warm. Meanwhile, spread mayo on your hamburger buns, layer on shredded lettuce, then stack up your chicken and pineapple for the perfect sandwich.
