Flatbread Dough

  • 1 cup Mashed Potatoes cooled, about 240g
  • 1 cup All-purpose flour plus extra for dusting

Instructions

  • Place the mashed potatoes and flour on your work surface. Mix together with your hands until a sticky dough forms.
  • Shape dough into a sausage roll and cut into 8 equal pieces. Roll each into a ball.
  • Dust work surface and dough balls with flour, then roll out each ball thinly.
  • Heat a dry non-stick frying pan over medium-high heat.
  • Place one rolled-out flatbread into the pan and cook for about 2 minutes, flipping halfway through.
  • Repeat with each flatbread, rolling out the next while one is cooking.
  • Keep cooked flatbreads wrapped in a clean kitchen towel to stay warm.
  • Serve immediately while warm, plain or as a side to your favorite meal.
  • Store leftovers in an airtight container or foil and reheat on a pan.

Notes

This flatbread can be made using freshly cooked or leftover mashed potatoes. Adjust the flour if the mash is very moist.
