Ingredients
Flatbread Dough

Mashed Potatoes
cooled, about 240g

All-purpose flour
plus extra for dusting

Instructions
Place the mashed potatoes and flour on your work surface. Mix together with your hands until a sticky dough forms.
Shape dough into a sausage roll and cut into 8 equal pieces. Roll each into a ball.
Dust work surface and dough balls with flour, then roll out each ball thinly.
Heat a dry non-stick frying pan over medium-high heat.
Place one rolled-out flatbread into the pan and cook for about 2 minutes, flipping halfway through.
Repeat with each flatbread, rolling out the next while one is cooking.
Keep cooked flatbreads wrapped in a clean kitchen towel to stay warm.
Serve immediately while warm, plain or as a side to your favorite meal.
Store leftovers in an airtight container or foil and reheat on a pan.
Notes
This flatbread can be made using freshly cooked or leftover mashed potatoes. Adjust the flour if the mash is very moist.
