- 8 oz pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 1 lb chicken breast, sliced into thin strips
- to taste salt and pepper
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 teaspoon dried Italian herbs (basil, oregano, thyme)
- 1 cup grated parmesan cheese
- fresh basil leaves for garnish
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
In a skillet over medium heat, heat the olive oil. Add the sliced chicken, seasoned with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth and heavy cream. Stir in the sun-dried tomatoes and Italian herbs. Bring the mixture to a simmer and let it cook for about 5 minutes.
Add the cooked chicken and parmesan cheese to the sauce, stirring until the cheese is melted and the sauce is creamy.
Add the cooked pasta to the skillet and toss until well combined.
Plate the pasta and garnish with fresh basil leaves. Adjust seasoning if necessary and enjoy your delicious Marry Me Chicken Pasta!
You can substitute chicken breast with diced chicken thighs for a juicier result.
Feel free to add spinach or other vegetables to the dish for a nutritious twist.
If desired, sprinkle some extra parmesan cheese on top before serving for added flavor.
