4 Serving plates
- 12 ounces penne pasta
- 1 pound chicken breasts, boneless and skinless Season with salt and pepper.
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- ½ cup grated Parmesan cheese
- to taste salt
- to taste pepper
- fresh basil for garnish Optional.
In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
While the pasta is cooking, season the chicken breasts with salt and pepper on both sides. In a skillet, heat the olive oil over medium heat and cook the chicken for about 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest before slicing.
In the same skillet, reduce the heat to low and add the minced garlic. Sauté for about 1 minute until fragrant.
Pour in the chicken broth and heavy cream. Stir in the chopped sun-dried tomatoes, Italian seasoning, and Parmesan cheese. Allow the sauce to simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly.
Slice the cooked chicken and add it to the sauce. Stir in the cooked pasta until well coated with the sauce. Season with additional salt and pepper as needed.
Plate the pasta and chicken, then garnish with fresh basil if desired. Enjoy your mouthwatering Marry Me Chicken Pasta!
For an added kick, consider sprinkling some red pepper flakes into the sauce.
This dish pairs perfectly with a side salad and garlic bread.
