Slice your tomatoes and red onion into thin, even pieces.
In a bowl, whisk together olive oil, red wine vinegar, crushed garlic, sea salt, and black pepper till it’s all smooth.
Toss the tomato and onion slices into the marinade bowl along with the chopped parsley, basil, and capers, if using.
Gently toss everything to coat but be careful not to mush the tomatoes.
Transfer the salad mix into your pressure cooker pot.
Lock the lid and set to low pressure. Cook for 3 minutes, then quick release.
