- 200 g feta cheese, cubed
- 200 g mozzarella cheese, cubed
- 200 g mixed olives (e.g., Kalamata, green)
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- ½ teaspoon red pepper flakes (optional)
- 120 ml olive oil
- 60 ml balsamic vinegar
- to taste none freshly cracked black pepper
In a large bowl, combine the cubed feta cheese, mozzarella cheese, and mixed olives.
In a separate smaller bowl, whisk together the minced garlic, oregano, rosemary, red pepper flakes (if using), olive oil, balsamic vinegar, and black pepper until well combined.
Pour the marinade over the cheese and olives mixture in the large bowl. Gently toss to ensure all ingredients are coated in the marinade.
Transfer the marinated cheese and olives to a glass jar or container and make sure the garlic and herbs are evenly distributed.
Seal the container with a lid and refrigerate for at least 2 hours (or ideally overnight) to allow the flavors to meld.
Serve chilled or at room temperature as an appetizer with bread or crackers.
The longer the cheese and olives marinate, the more flavorful they will become, so consider marinating them overnight for the best taste.
You can customize this recipe by adding other herbs like thyme or basil, or incorporating additional ingredients like sun-dried tomatoes for extra flavor.
