Manti-inspired Turkish Pasta

  • 1 cup short pasta like macaroni, bowtie, or your choice
  • 250 g minced beef or lamb the base for meaty goodness
  • 1 onion finely chopped
  • 1 teaspoon paprika for smoky, warm flavor
  • 1 teaspoon curry powder adds a little Asian fusion kick
  • ½ teaspoon salt brings all flavors together
  • 1 cup Greek yogurt for creaminess in serving
  • 3 tablespoon butter or olive oil combine with 1 teaspoon paprika
  • 1 clove garlic minced
  • ½ cup cherry tomatoes chopped
  • 2 tablespoon fresh parsley or cilantro for fresh pop of flavor

  • Cook your short pasta 'til al dente according to package directions. Drain and set aside so it doesn’t get soggy later.
  • Set your pressure cooker to sauté mode or heat it on the stove if it's a stovetop model. Add a bit of oil, then toss in the chopped onion.
  • Sauté onions until translucent, soft, and smelling sweet. This usually takes a few minutes.
  • Add your minced beef or lamb. Stir it around and cook until it’s nicely browned.
  • Sprinkle paprika, curry powder, and salt over the meat. Mix well so every bit tastes spicy and warm. Let it cook for a minute so spices wake up.
  • Add the cooked pasta back to the pot and stir together with the meat mixture. Make sure everything’s mixed well.
  • Close your lid and set the valve to sealing. Set pressure cook on high for about 3 minutes. Perform quick release when done.
  • While pressure is releasing, mix Greek yogurt with minced garlic and salt for sauce. Top pasta with sauce, drizzle paprika butter, then scatter tomatoes and herbs to finish.

Serve pasta warm, topped with yogurt sauce and a drizzle of paprika butter, garnished with fresh tomatoes and herbs.
