Ingredients
  

  • 1 pound ground beef or turkey Substitute ground beef for ground chicken or turkey to reduce fat content.
  • 1 cup shredded cheddar cheese
  • ½ cup almond flour
  • 1 large egg
  • 1 tablespoon taco seasoning Feel free to use spicy taco seasoning for an added kick.
  • ½ cup enchilada sauce (sugar-free)
  • ½ cup diced green peppers
  • ¼ cup chopped onion
  • ½ teaspoon garlic powder
  • to taste salt and pepper
  • optional fresh cilantro for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a mixing bowl, combine ground beef (or turkey), almond flour, shredded cheddar cheese, egg, taco seasoning, garlic powder, salt, and pepper. Mix until well combined.
  • Gently fold in the diced green peppers and chopped onion.
  • Use your hands to form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
  • Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and browned on the outside.
  • While the meatballs are baking, heat the enchilada sauce in a large skillet over medium heat.
  • Once the meatballs are done, transfer them to the skillet and coat them in the heated enchilada sauce. Cook for an additional 2-3 minutes.
  • Serve the meatballs topped with fresh cilantro if desired.

Notes

You can substitute ground beef for ground chicken or turkey to reduce fat content if desired.
Feel free to add diced tomatoes or other vegetables into the meatball mixture for extra nutrition.
For an added kick, you can use spicy taco seasoning or add diced jalapeños to the meatball mixture.
These meatballs can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
