Preheat the oven to 425 degrees Fahrenheit. Wash and scrub the russet potatoes thoroughly, then pierce them several times with a fork.
Rub the potatoes with olive oil and sprinkle kosher salt all over.
Place the potatoes on the oven rack and bake for 45 to 60 minutes until tender.
While baking, heat a skillet over medium-high heat, add chopped steak, and season with salt and pepper.
Cook the steak for about 5 to 7 minutes, stirring until browned.
When potatoes are done, cool slightly, cut a slit on top, squeeze to open the inside.
Add butter, cheese, and sour cream to each potato. Top with cooked steak and drizzle with steak sauce.
