  • 3-4 pounds Russet potatoes about 6 large or 10 medium-size potatoes
  • 2 tablespoons Olive oil
  • ½ teaspoon Kosher salt for potatoes
  • 1 pound Skirt or flat steak cut into ½-inch pieces
  • ¾ teaspoon Kosher salt for steak
  • ½ teaspoon Freshly ground black pepper
  • 3 tablespoons Butter
  • Steak sauce for drizzling
  • Shredded cheese cheddar or mozzarella
  • Sour cream optional topping
  • Sliced green onions optional topping

  • Preheat the oven to 425 degrees Fahrenheit. Wash and scrub the russet potatoes thoroughly, then pierce them several times with a fork.
  • Rub the potatoes with olive oil and sprinkle kosher salt all over.
  • Place the potatoes on the oven rack and bake for 45 to 60 minutes until tender.
  • While baking, heat a skillet over medium-high heat, add chopped steak, and season with salt and pepper.
  • Cook the steak for about 5 to 7 minutes, stirring until browned.
  • When potatoes are done, cool slightly, cut a slit on top, squeeze to open the inside.
  • Add butter, cheese, and sour cream to each potato. Top with cooked steak and drizzle with steak sauce.
  • Enjoy your loaded baked potatoes.
