  • 12 gluten free frozen chicken tenders I like Perdue Simply Smart
  • 8 pieces bacon crispy and crumbled
  • 1 cup shredded cheddar cheese melty goodness
  • 1 can corn drained and heated
  • ½ cup diced green onions fresh topping
  • ¼ cup sour cream cool dollop

  • Preheat your oven according to the chicken tenders package. This makes sure they get that perfect golden brown outside.
  • Get your gluten free mashed potatoes ready your way. You can use instant or homemade but just make sure they’re creamy and warm.
  • While the oven heats and potatoes prep, cook the bacon over medium heat in a skillet. You want it crispy enough to crumble but not burnt.
  • Pop the chicken tenders in the oven and bake for about 20-25 minutes till golden and heated through.
  • Once everything is cooked, start assembling. Spoon a big scoop of mashed potatoes in each bowl.
  • Top with the warm corn, crumbled bacon, shredded cheese, green onions, and a dollop of sour cream. Serve hot and enjoy every bite!

Notes

Prepping ahead: You can make the mashed potatoes and bacon ahead of time, so all you need to do is cook the chicken and assemble your bowls. This can get dinner on the table faster on busy nights!
