  • 1 lb lean ground turkey
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 can (15 oz) red kidney beans drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup canned tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • Salt and pepper to taste

  • Spray the pressure cooker pot with nonstick spray and set to medium-high heat.
  • Add ground turkey, chopped onion, and green bell pepper. Cook until browned and tender, about 5 to 7 minutes.
  • Reduce heat to medium. Add kidney beans, diced tomatoes, tomato sauce, chili powder, garlic powder, cumin, salt, and pepper. Stir to combine.
  • Bring to a gentle simmer, then close and seal the pressure cooker lid.
  • Once pressure builds and float valve rises, cook for 15 to 20 minutes on high pressure.
  • Let pressure release naturally. Once float valve drops, open the lid, stir, and serve.

Notes

Let leftovers cool before storing in airtight containers. Freeze portions for later and reheat gently for best texture and flavor.
